Chimichurri, an Argentinan BBQ salsa with an English name- El acompañante obligado para un asado argentino

Parsley, garlic and spices. Perejil, ajo y especias.

Those are the delicious aromas of Chimichurri and when my house smells like them we know is a day of gathering with friends and family. My husband makes a fresh batch every time he prepares one of his famous asados, or bbq Argentinian style.

Many countries have adopted Chimichurri as their go to bbq sauce. Two years ago we were happily surprised in Puerto Rico, where we found a bottle of it in every restaurant. It’s the perfect companion for grilled meat, including burgers.

Cuando mi casa huele a perejil, ajo y otras especias, ya sabemos que mi esposo está haciendo su famoso chimichurri, lo que significa que tenemos reunión con familia o amigos en casa. Él hace uno nuevo cada vez que enciende la parrilla (al carbón) y pasa horas deleitándonos con un tremendo asado.

Aunque el chimichurri es autóctono del Cono Sur, muchos países lo han adoptado como la salsa obligada para la carne a la parrilla. Hace dos años, fuimos gratamente sorprendidos en Puerto Rico cuando encontrábamos una botellita de esta delicia en cada mesa. Es el perfecto acompañante para la carne a la parrilla, incluyendo hamburguesas.

If you are having trouble pronouncing chimichurri you are not alone. That is not even the name we use  in my home. Our nick name is “chuchurri,” how my younger son used to call it when he was 2 years-old.

There are two main stories regarding the origin of the word “chimichurri” and both of them are around English speakers.  In one of them, an Irish man named James McCurry tried to create his version of the Worcestershire sauce while in Argentina. He came up with a green sauce with a parsley and red pepper base. The locals started to call it “la salsa de Yimmi Churri” and from there became “chimichurri”.

Si tienes problemas para pronunciar chimichurri no estás solo o sola. En mi casa le llamamos “chuchurri”. Así le puso mi hijo menor cuando trataba de pronunciar el nombre de su salsa favorita a los dos añitos.

Hay dos historias con fuerza sobre el origen de la palabra chimichurri y las dos giran en torno a angloparlantes. En una de ellas, un irlandés llamado Jim McCurry trató de recrear la salsa Worcestershire con ingredientes que encontró en Argentina. Le mezcló perejil y ají o pimiento rojo. De allí quedó la salsa de Yimmi Curri y el resto es historia.

Another story is that the British colonizers used the term “curry” to describe the sauce used by the locals to garnish their meats. Regardless of the origin of the word. The reality is that it’s ingredients enhance the flavor of the meat in ways that only a foodie can describe properly.

Otra historia es que los colonos ingleses usaron el término indio para la salsa picante “curry” para descubrir esa mezcla verde que usaban los locales para acompañar su carne asada. Pero más allá del origen, lo cierto es que el chimichurri destaca los sabores de la carne en formas que solo un gourmet puede describir adecuadamente y el resto de los mortales debemos probar.
